Bruschetta

This is on the top of my list for the perfect snack. Healthy, light, and full of fresh flavor. Enjoy alone or with a meal!

Ingredients

French baguette, thinly sliced

2 Roma tomatoes, seeded and chopped

½ small red onion, chopped

2 tablespoons fresh parmesan cheese

As much basil as you like, sliced into ribbons

1 tablespoon extra virgin olive oil

1-2 tablespoons balsamic vinegar

Salt & Pepper, to taste

1 large garlic clove

Directions

Pre-heat the oven to 400 degrees. Toast the baguette slices.

In a large bowl, add tomatoes, onion, basil, oil, vinegar, parmesan, and salt & pepper. Season to taste.

After the baguette is toasted, rub each piece with the garlic clove. Top sliced baguettes with bruschetta and enjoy!
