Lemon Herb Chik’n with Wild Rice

Ingredients

1 box Morning Star Chik’n patties

1 box Uncle Ben’s Long Grain & Wild Rice

½ cup Vegetable broth, plus more for cooking rice

Zest of 1 lemon

1/3 cup fresh lemon juice

1 teaspoon white wine vinegar

2 tablespoons capers

2 tablespoon flat leaf parsley, chopped & divided

1 tablespoon parkay butter spray

2 tablespoons parmesan cheese

Directions

Cook patties according to package directions. Cook rice according to package directions except replace the water amount with vegetable broth.

For the sauce

In a saucepan over medium heat, add broth, zest & lemon juice, vinegar, and capers. Simmer to reduce by half. Add parsley and whisk in butter. Once the sauce is silky, it is ready.

To Serve

Top plate with sauce, just enough to cover a thin layer. Plate patties, rice, and top with any remaining sauce. Garnish with remaining parsley and parmesan cheese. Enjoy!
