4 thin slices of French bread
Parkay butter substitute spray
2-4 slices fresh mozzarella cheese
Fresh Basil leaves
Homemade Marinara dipping sauce, recipe follows
Heat a medium to large skillet over medium heat. Spray one side of each slice of bread with parkay spray. Top each slice with fresh mozzarella cheese, top with other slices of bread. Place in skillet, top with the remaining bread slices, and spray with parkay spray. Cook sandwich by pressing down with a spatula. Once the bottom is turning a golden brown, flip and cook the other side. Serve with fresh basil and dipping sauce.
Pre-heat a saucepan over medium heat.
In a food processor, combine 1 14.5-ounce can of whole tomatoes, ¼ red onion, pinch of red pepper flakes, salt & pepper, 2 tablespoons parmesan cheese, 1 teaspoon Italian seasoning, and 5 fresh basil leaves. Pulse a few times and slowly add 1-tablespoon extra virgin olive oil. Process until somewhat chunky, but mostly smooth.
Transfer into the saucepan, bring to a slow boil, reduce heat, and simmer until thickened. Taste and adjust seasonings if needed. Add 1-2 tablespoons splenda, stir well to combine. Simmer for 3 minutes.
