
Happy Vegan Month!
I LOVE this time of year, cool weather, leaves changing color, and of course SOUP!
My husband and I love loaded potato soup, but we have been on a sweet potato kick for a while now so we decided why not make Loaded Sweet Potato Soup. It is so delicious; this should be on everyone’s table sometime this fall and winter!
You will need
2 large sweet potatoes
1 leek, white & green parts, cut in half and sliced
1 carrot, shredded
1 large yellow sweet onion, chopped
2 large garlic cloves, minced or pressed
1 32 ounce box organic vegetable broth
½ cup soy milk
6 green onions, sliced
Garnishes
Smart bacon, crisp & diced
Vegan sour cream
Vegan cheddar cheese, shredded
Sliced green onions
Directions
Cook sweet potato in the microwave for 4 minutes, allow to cool before handling. Chop into bite sized pieces.
In a stockpot, add potatoes, leeks, carrot, onion, garlic cloves, vegetable broth, and a little salt & pepper. Cook until potatoes are tender. Puree half of the soup in a blender and place into Crockpot. Add milk and stir. Cover and cook for 3-4 hours.
Cook smart bacon until crisp and crumble or dice. Shred cheese.
Ladle soup into bowls and top with garnishes. Enjoy!

Hi there! I love sweet potatoes but have no idea I never like them in puree soup. I love mashed sweet potatoes, but my taste just doesn’t go so well with puree and hummus. I’d better have them in one bite size. So, can I just leave the potatoes that way? I mean without having them puree, If so, what is the perfect time to cook this soup with one bite size potatoes? If I have one bite size with that much cooking time, I will smash my potatoes I think. My point is I want something texture on my soup.

I can’t say I’m a big fan of Sweet Potato Soup, but I do love a good sweet potato pie. I’ll have to get moving on some Peanut Soup soon, perfect accompaniment to a cold evening.
