Happy Vegan Month!
The full delicious traditional Gyro flavors Vegan style!
You will need
1 box Vegan Falafel Mix, I used Fantastic World Foods
Whole Wheat Pita Bread
2 Roma Tomatoes, chopped
Half a red onion, sliced
Vegan Tzatiki Sauce, recipe follows
Directions
Pre-heat oven to 400º
Follow directions for falafel mix. Once I did this I added in fresh dill (I LOVE Dill) Use a tablespoon measurer to form even balls. Place onto cookie sheet, sprayed with Pam or other non-stick spray. Place balls in an even layer and spray the tops of the falafel balls. Bake for 15 minutes, flip, spray again, and cook for an additional 15 minutes or until crisp on the outside. If desired you could fry these the traditional way.
Place Pita bread in foil and heat during the last 10 minutes with the falafel balls.
Tzatiki Sauce
1 container vegan yogurt or vegan sour cream, I used tofutti brand
½ a hothouse cucumber, grated and salted to remove excess moisture
Juice of 1 small lemon
½ tablespoon olive oil
1 garlic clove, minced
1 tablespoon red wine vinegar
2 tablespoons fresh dill, cut with scissors
1 teaspoon fresh mint, chopped
Pinch onion powder
Salt & Pepper, to taste
Combine all ingredients in a covered bowl and refrigerate for at least 3 hours. I do mine first thing in the morning for maximum flavor.
To Serve
Place falafel balls in pita bread, top with tomatoes, onions, and tzatiki sauce. Fold and Enjoy!
