1 7-ounce package Anelleti pasta (O Shaped)
1 15-ounce can Organic tomato sauce, no salt added
2 ½ cups water
1 large garlic clove, pressed
1/3 cup almond or soymilk
1/3 cup vegan shredded cheddar cheese
1/2 tablespoon vegan butter
Pinch of salt & pepper
1/2 teaspoon splenda
Begin pre-boiling the pasta in a large pot of boiling water 5-10 minutes. After 10-minutes, drain the pasta and return it to the pot. Add the butter and stir to coat using its residual heat.
In the meantime, add the tomato sauce, garlic, pepper, salt, and sugar to the blender and blend until smooth. This breaks up any clumps in your sauce and incorporates the seasonings.
Add the tomato mixture to a large pot along with the water and stir. Turn the heat to medium. Slowly add the pasta to the tomato sauce and let simmer for about 20-minutes making sure to stir every 5-minutes or so to ensure the pasta does not stick to the bottom of the pot.
Give your pasta a taste test, check, and adjust the seasonings if necessary. Also, check the sauce consistency. The pasta should have soaked up all the sauce, but if it is still too thin, let simmer for another 10-minutes or so.
Turn off the heat, add the milk and shredded cheddar, and then stir. The milk gives it that great creamy taste and the cheese helps hold things together.
