I LOVE bruschetta, because I indulge in it multiple times a week I thought why not make an entire dish out of it and it is a new favorite in our house!
2 Boca Chik’n patties
2 slices veggie or vegan mozzarella style cheese
French baguette, thinly sliced
2 Roma tomatoes, seeded and chopped
½ red onion, chopped
2 tablespoons veggie or vegan parmesan cheese
As much basil as you like, sliced into ribbons
1 tablespoon extra virgin olive oil
1-2 tablespoons balsamic vinegar
Salt & Pepper, to taste
1 large garlic clove
Pre-heat the oven to 400 degrees. Follow oven directions for the patties. When patties are done, top with mozzarella slices and allow to melt.
In a large bowl, add tomatoes, onion, basil, oil, vinegar, parmesan, and salt & pepper. Season to taste.
In the last five minutes of cooking time add the sliced French baguette and lightly toast. After the baguette is toasted, rub each piece with the garlic clove. Top sliced baguettes with bruschetta.
Top each chik’n with bruschetta mixture and enjoy!
