The folks at Avocados From Mexico have just launched a new recipes section on their site “Recipes From Avocado Lovers” to give foodies who love avocados, the opportunity to upload their favorite avocado recipes, download ringtones, wallpapers and other fun items to show their avocado love and discover other fan favorite avocado recipes.
For the Tacos
1 (15-ounce) can organic vegan black beans
½ red onion, diced
1 handful cilantro, chopped
2 garlic cloves, minced
1/2 teaspoon chili powder
Salt & Pepper, to taste
Juice of ½ a lime
Small Flour Tortillas
1 Mexico avocado, smashed
Cilantro Lime Sour Cream, vegan (just combine all 3)
Pico de gallo
Drain black beans and combine with onion, cilantro, cumin, chili powder, and lime juice. Season to taste with S & P. With a fork, lightly mash beans until the mixture thickens.
Place tortillas on a plate between 2 damp paper towels and heat for 1-2 minutes until soft.
Fill tortillas with bean mixture, cilantro lime sour cream, smashed avocado, and pico de gallo. Enjoy!
