A perfect addition to tacos, fajitas, or as a fresh snack with tortilla chips. This salsa also made a delicious companion with my Bean & Potato Breakfast Tacos!
You will need
1 10 oz can of Rotel diced tomatoes with Habaneros
1 14.5 can of whole peeled tomatoes
1 fresh jalapeño pepper, with seeds
1 fresh jalapeño pepper, seeded
1/2 yellow onion
1/4 cup diced red onion
2 garlic cloves
1 bunch cilantro
1/2 teaspoon cumin
1/4 teaspoon splenda
Juice of 1 lime
Directions
In a food processor place onions, jalapeños, and garlic. Process for a few seconds.
Add both cans of tomatoes, cilantro, cumin, splenda and season with salt & pepper. Process all ingredients until blended, but do not puree.
Move into a container, cove, and chill in the refrigerator for a few hours to overnight.




I love that this recipe starts with Rotel! I will have to try this recipe out, since we love love salsa!
